Two Easy Prep-Ahead Meals

I am officially on board with the magic of meal prepping. Of course it always sounded great in theory- but I’ve struggled with planning what to make each week. I’ve tried it so many times, but would quickly grow tired of making a new menu, writing out the grocery list, actually getting the groceries, let alone prepping it all for the week. The biggest challenge for me was figuring out how to be able to stick with it and do it consistently.

Who else hates thinking about what to make for dinner every day??

I’m a busy working mom and still have one or both kids with me 24/7, so I need something quick but healthy. These two go-to meals are so easy to prepare in advance and make the healthiest option the easiest one.

I’ve finally been able to streamline my process and eliminate all of those previous challenges, so this is exactly what works for me:

  1. I have two go-to meals (usually lunches) that are easy to make and eat every day. 
  2. I do grocery delivery or pick-up every week. Such a life-saver.
  3. Meal prepping for me is simply chopping all my produce every Sunday, and that has simplified everything else. It takes the guesswork out of what to eat, which is life-changing!

These meals are so easy and versatile, with plenty of options. These are just my base “recipes,” but switch up the veggies each week if you get tired of the same things. These are my standard go-to meals, but I often change it up depending on what produce is on sale, in season, or what I need to use up. 

Chicken Sausage and Veggie Bowl:

(In the order that I cook them and add to the pan): Sweet potatoes, mushrooms, onions, zucchini, peppers, seasoning, chicken sausage, spinach, avocado. 

Hearty Green Chicken Salad:

Romaine lettuce, shredded carrots, grape tomatoes, cucumbers, grilled chicken, hemp hearts, dressing, avocado, parmesan crisps (leave out if dairy-free). 

I don’t have to plan as many meals each week because of these easy options. If you read this and think, “Ew, salad…,” just know that I have NEVER been a salad person. I don’t really like lettuce (ha!), but I do love this salad! I add in all the veggies and extras I like, and it is so easy and filling.

Clearly, “easy” is a key factor for me!
